Tomato Basil Oven Baked Fish

INGREDIENTS
  • 4 6-8 oz fish fillets (salmon, cod, etc)
  • 2 Tbsp coconut oil
  • 2 Cloves of chopped garlic
  • 4 Green onions
  • 4 Tbsp chopped basil
  • 1 Tbsp oregano
  • Red chili pepper to taste
  • 6 Plum tomatoes chopped and drained


DIRECTIONS
  1. Preheat over to 400 degrees.
  2. Saute garlic and onions over med heat, reduce to med/low and add herbs.  Let simmer for 45 minutes.
  3. Turn off heat and add sliced tomatoes.
  4. Coat both sides of the fish with coconut oil and sear in a separate skillet - 2 minutes per side.
  5. Place the fish in a baking dish and top with tomato herb mix.  Bake at 400 for 6 - 8 minutes.
  6. Serve with fresh salad or steamed/roasted veggies.
