Tomato Basil Oven Baked Fish
INGREDIENTS
DIRECTIONS
- 4 6-8 oz fish fillets (salmon, cod, etc)
- 2 Tbsp coconut oil
- 2 Cloves of chopped garlic
- 4 Green onions
- 4 Tbsp chopped basil
- 1 Tbsp oregano
- Red chili pepper to taste
- 6 Plum tomatoes chopped and drained
DIRECTIONS
- Preheat over to 400 degrees.
- Saute garlic and onions over med heat, reduce to med/low and add herbs. Let simmer for 45 minutes.
- Turn off heat and add sliced tomatoes.
- Coat both sides of the fish with coconut oil and sear in a separate skillet - 2 minutes per side.
- Place the fish in a baking dish and top with tomato herb mix. Bake at 400 for 6 - 8 minutes.
- Serve with fresh salad or steamed/roasted veggies.
