Tomato & Onion Salad
INGREDIENTS
- 2 tomatoes- sliced (can also be made with 1/2 cups grape tomatoes- halved
- 1 small onion- sliced thin (diced if using the grape tomatoes)
- 1 cup balsamic vinegar
- 1 teaspoon garlic- minced
- 1 teaspoon fresh basil- coarsely chopped
DIRECTIONS
- 2 tomatoes- sliced (can also be made with 1/2 cups grape tomatoes- halved
- 1 small onion- sliced thin (diced if using the grape tomatoes)
- 1 cup balsamic vinegar
- 1 teaspoon garlic- minced
- 1 teaspoon fresh basil- coarsely chopped
DIRECTIONS
- Pour balsamic vinegar into small saucepan on medium heat. Bring just to a boil and then reduce heat to a simmer. Stir occasionally and allow to heat until vinegar has reduced by at least half (for a thin reduction) or more (for a more syrupy reduction). Don't get impatient and increase heat or it will turn to a sticky mess. Once desired consistency of balsamic reduction is reached remove from heat and allow to cool.
- If using sliced tomatoes, arrange tomatoes on a platter in a single layer.
- Top each tomato with a thin onion slice.
- Drizzle with balsamic reduction. (Store remaining balsamic reduction in air tight container and store in refrigerator until ready to use.)
- Sprinkle with garlic and basil and enjoy!
