Spaghetti Squash



INGREDIENTS
-     1 large spaghetti squash
-     1 can of organic diced tomatoes (check the ingredients carefully to make sure that it only contains tomatoes and      possibly salt- otherwise substitute with hand diced tomatoes)
-     1 yellow onion, diced
-     2 peppers (2 different colors preferably)
-     1 Tbsp of minced garlic
-     1 Tbsp of Italian herbs (a combo of fresh basil, oregano, marjoram, thyme, rosemary, and sage is preferable, but any combo that agrees with your taste buds will work.  Try Earth's Pride Organic Italian Seasoning for the perfect blend).

DIRECTIONS (Makes enough for 2 adults):
1. Pre-heat oven to 350 degrees.
2. Cut spaghetti squash in half lengthwise (requires some strength and a sharp knife).
3. Remove seeds and goop from inside squash using a spoon- similar to how you would gut a jack-o-lantern.
4. Bake in glass dish with skin side up (cut side down) for roughly 45 minutes.
5. While squash is baking, add tomatoes, onion, peppers, garlic, and seasoning to pan and simmer on medium heat for about 5 minutes (until desired tenderness of peppers and onion is obtained.)
6. Remove spaghetti squash from oven and (using oven mitt to hold the squash) use a fork to rake the squash from side to side over a serving bowl, making spaghetti-like threads.
7. Add the tomato sauce mixture and season further to taste if necessary.  Toss and serve!
