Shaved Asparagus Salad
INGREDIENTS
- 1 bunch of asparagus
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup olive oil
- sea salt and black pepper to taste
DIRECTIONS
Working on flat cutting board, hold uncooked asparagus spear by the end laying flat and use vegetable peeler to shave asparagus towards the bud, making thin ribbons. When about half done flip asparagus and repeat on other side until left with an end. (Discard end.) Repeat with remaining spears. Blend lemon juice and olive oil and pour over asparagus in bowl. Season with salt and pepper to taste and serve.
