Thai Steak Salad
INGREDIENTS
- 2 Salmon fillets
- 2 Tbsp lemon juice
- 2 Tbsp olive oil
- 1 Small clove garlic, minced
- 1/4 tsp salt, or to taste
- Freshly ground pepper to taste
- 2 Cups grated carrots
- 3 Tbsp chopped fresh dill
- 2 Tbsp chopped scallions
DIRECTIONS
- Whisk lemon juice, oil, garlic, salt and pepper in a mixing bowl. Add carrots, dill and scallions, toss to evenly coat. Chill until ready to serve.
- Coat salmon with coconut oil and garlic and grill or bake. Place on a mound of the salad and enjoy.
