Salmon Ceviche with Cilantro & Lime

- 2 wild salmon fillets
- 2 limes- juiced
- 1 red chilles deseeded and finely chopped
- 1 Tbsp chopped cilantro leaves
- 1 garlic clove, finely chopped or crushed
- 1/2 small red onion, finely chopped
- Sea salt to taste
- Fresh ground pepper to taste
Directions
- Slice salmon into pieces about a 1/2 inch think and put in a wide, non-metallic bowl
- Add the lime juice, cilantro, onion, and garlic to coat the fish
- Cover and refrigerate for at least 4 hours
- Remove fish, drain excess liquid, and serve fish with chopped fresh cilantro and salt to taste.
