Roasted Garlic Hummus
INGREDIENTS:
- 1 can chickpeas/garbanzo beans (15 oz.)
- 2 Tbsp roasted garlic
- 1/2 Tbsp fresh squeezed lemon juice
- 1 Tbsp olive oil
- 1/2 tsp oregano
- parsley to garnish
DIRECTIONS:
In a food processor or vitamix, process beans, garlic, olive oil, lemon juice and oregano until desired consistency. If hummus is too thick simply add small amounts of olive oil until desired consistency is reached. Serve roasted garlic hummus (garnished with finely chopped parsley) with carrots and sliced peppers.
