Pineapple Stir Fry

- 2 peppers (any color, but choose two different colors)-chopped
- 1 onion-chopped
- 1 can water chestnuts
- 1 can bamboo shoots
- 2 shoots of green onion- sliced
- 1/2 fresh pineapple (puree in blender until thick, slightly lumpy liquid)
- 1 knub of fresh ginger root (roughly the size of your thumb)- grated or minced
- 1 Tbsp coconut oil
- 1 cup cooked quinoa (serves 2)
Directions
- Warm a wok or skillet to medium heat and add coconut oil.
- Saute peppers, onion, water chestnuts, and bamboo shoots in coconut oil for about 3-5 minutes stirring occasionally.
- Add 2/3 of your pineapple "sauce" to the pan and ginger paste to taste. (Ginger can be tricky so here is a useful tip if you happen to overseason with ginger- the longer the ginger simmers, the less ginger flavor you'll taste.) Continue to cook for one more minute.
- Add green onions and toss to mix. Remove from heat.
- In a separate saucepan warm rice with remaining pineapple "sauce" .
- Serve pineapple stir fry mixture over quinoa and enjoy!
