Pineapple Stir Fry

Ingredients
  • 2 peppers (any color, but choose two different colors)-chopped
  • 1 onion-chopped
  • 1 can water chestnuts
  • 1 can bamboo shoots
  • 2 shoots of green onion- sliced
  • 1/2 fresh pineapple (puree in blender until thick, slightly lumpy liquid)
  • 1 knub of fresh ginger root (roughly the size of your thumb)- grated or minced
  • 1 Tbsp coconut oil
  • 1 cup cooked quinoa (serves 2)

Directions
  1. Warm a wok or skillet to medium heat and add coconut oil.
  2. Saute peppers, onion, water chestnuts, and bamboo shoots in coconut oil for about 3-5 minutes stirring occasionally.
  3. Add 2/3 of your pineapple "sauce" to the pan and ginger paste to taste.  (Ginger can be tricky so here is a useful tip if you happen to overseason with ginger- the longer the ginger simmers, the less ginger flavor you'll taste.)  Continue to cook for one more minute.
  4. Add green onions and toss to mix.  Remove from heat. 
  5. In a separate saucepan warm rice with remaining pineapple "sauce" .
  6. Serve pineapple stir fry mixture over quinoa and enjoy!
