Mixed Greens Tuna Salad

Ingredients
  • 2 6-8 oz tuna steaks
  • 1/2-1 cup cooked quinoa
  • 2-3 cups mixed greens
  • 1/2 carrot, grated
  • 2 tsp extra virgin olive oil
  • 1 tsp balsamic vinegar
  • Sea salt and pepper to taste

Directions
  1. Grill tuna steaks on med-high heat for 6 minutes on each side
  2. Combine olive oil, balsamic vinegar, salt and pepper in a bowl and set aside
  3. Flake or dice tuna and toss with quinoa, mixed greens, carrot, and dressing
  4. Serve and enjoy
