Hearty Veggie Stew
INGREDIENTS
- 1 organic zucchini chopped
- 1 cup of organic broccoli chopped
- ½ cup of cauliflower
- 3 large peeled and chopped organic carrots
- 3 organic celery stalks chopped
- 1 cup of organic kale de-stemed and chopped
- ½ small onion chopped
- 2 cloves of garlic chopped
- 2 tbsp of unrefined avocado oil
- 1 bay leaf
- ½ tsp of celtic sea salt
- ¼ tsp of pepper
DIRECTIONS
Saute onion and garlic in olive oil until tender. Add all of the chopped veggies. Add enough water to the pot to almost entirely cover the vegetables (but do not fully cover them). Add 1 bay leaf, salt, and pepper. Stir. Bring to a slight boil. Reduce heat to low and simmer soup until vegetables are slightly tender. Remove bay leaf before serving and eating. Add additional salt if desired.
