Fruity Kale Salad
INGREDIENTS
- 1 head of organic kale
- 1 navel orange- chopped in small pieces
- ¼ cup olive oil
- 1 tsp of fresh grated ginger
- 1/8 – ¼ tsp celtic sea salt
- Juice from 1 mandarin or tangelo
- Juice from ½ a lemon
DIRECTIONS
De-stem kale and chop to bite size. Mix oil, ginger, salt and juices. With very clean hands, massage dressing into kale (massaging the kale is necessary). Toss orange pieces with kale. Serve and enjoy!
