Easy Lentil Soup
INGREDIENTS
- ½ small onion
- 3 large peeled carrots chopped
- 3 stalks of celery chopped
- 2 gloves of garlic chopped
- ½ cup organic red lentils
- ½ cup French lentils
- 2 ¼ cup of water
- ½ tsp of celtic sea salt
- ¼ tsp of pepper
- 1/8 tsp of curcumin
- 1 tbsp of coconut oil
DIRECTIONS
Sauté onion, garlic, in coconut oil until tender; then add carrots and celery and sauté for another 5 minutes on medium/low heat. Rinse lentils in water and drain. Add Lentils and water to the pan with the vegetables. Add salt, pepper and curcumin. Bring to a light boil, cover and simmer for 20 minutes.
