Dr. Jeremy's Vegetable Salad
INGREDIENTS
-spinach, mixed greens, and kale (washed and dried)
-1/2 red, orange, or yellow pepper (sliced)
-1/2 white onion (sliced)
-1 carrot (sliced)
-1/2 avocado (diced)
-1/2 red beet
-2 inches of cucumber (sliced and quartered)
-1/2 stalk of celery (sliced)
-1 fistful of broccoli
-1 tsp garlic (minced)
-1 tsp coconut oil
-1 Tbsp olive oil
DIRECTIONS
1.Cut greens off beet and rinse. Steam in double boiler for 25 minutes and then dice.
2.Saute pepper, onion in coconut oil over medium heat for 3-5 minutes. For the last minute of cooking add garlic.
3.Remove from heat and add olive oil to pan. Let sit while preparing rest of salad.
4.Mix all greens, carrot, avocado, cucumber, celery, and broccoli in large bowl. Toss well. Add cooked beet and sauteed pepper and onion on top. (No dressing should be necessary because of the sauteed veggies.)
