Chicken with Mango Salsa
INGREDIENTS
1 mango, peeled and finely chopped
1 Tablespoon fresh squeezed lime juice
1 Tablespoon and 1 1/2 teaspoons fresh squeezed orange juice
1/4 small onion, finely chopped
1 Tablespoon jalapeno pepper- finely chopped
2 teaspoons chopped fresh cilantro (or parsley if you prefer the flavor)
2 boneless skinless organic free-range chicken breasts
1 tablespoon coconut oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 cups cooked quinoa
DIRECTIONS
- In a medium bowl, combine the mango, lime juice, orange juice, onion, salt, and jalepeno. Stir in the cilantro (or parsley).
- Preheat the grill. Rub the chicken with the coconut oil and season with the salt and pepper. Place on the rack and grill, turning once, until the juices run clear and a meat thermometer registers 170°F- 10 to 12 minutes.
- Serve over cooked quinoa and topped with the salsa.
