Cauliflower Carrot Soup
INGREDIENTS
- 1 head of orange cauliflower
- ½ a small onion- chopped
- 4 stalks of celery- chopped
- 3 large carrots- peeled and chopped
- 1 tsp of fresh grated ginger
- 1 cup of filtered water
- ½ tsp of celtic sea salt
- ¼ tsp of pepper
- 1 tbsp avocado oil
DIRECTIONS
Saute onion in oil for 3 mins on medium heat. Add carrots and celery and saute for another 5 minutes. Add cauliflower and filtered water, salt, pepper and ginger. Steam all ingredients until tender. Pour everything into a blender or vitamix and puree. Serve warm with olive oil drizzled on top.
