Beet Chips



INGREDIENTS:
· 2 beets 
· 1/4 tsp garlic powder
· 1/2 tsp rosemary- finely chopped
· 1 tsp Himalayan or Celtic salt
· 2 Tbsp coconut oil

DIRECTIONS:
1. Preheat oven to 375 degrees (racks in center and lower positions).
2. Slice beets as thinly and uniformly as possible.
3. Melt coconut oil in small pan on low on stove.
4. In small bowl mix oil, salt, rosemary and garlic powder. 
5. Place beets in a bowl. Drizzle oil mixture over beets. Toss until they are fully coated.
6. Spread beets in a single layer on baking sheet.
7. Bake for 7 minutes and then flip chips. Bake for 7 more minutes then flip again.  Continue to bake, flipping and checking every 3 minutes until crispy but not burnt.  Chips on outside edges of the baking sheet may cook more quickly and need to be removed while the ones in the center finish baking.
