Baked Parsnip Fries with Rosemary


INGREDIENTS
  • 2 lbs of parsnips
  • 1 tbsp fresh rosemary- finely chopped
  • 1 large garlic clove- minced
  • 3 tbsp olive oil
  • salt and pepper to taste

DIRECTIONS
Preheat oven to 450 degrees.  Peel parsnips and cut into think strips (skinny french fry size).  Depending on the size of the parsnip this usually involves cutting in half and then cutting each half into strips 1/2 inch thick.  Lay parsnips out on cookie sheet in single layer and sprinkle with oil, garlic, and rosemary.  Lightly season with salt and pepper and toss to coat, being sure to return to a single layer before baking.  Bake for 10 minutes and then turn and bake for about 10 minutes more- until parsnips are tender and brown in spots without burning.
