Baby Portobello and Garlic Rice
INGREDIENTS
- 1 cup organic brown rice
- 1/2 cup baby portobello mushrooms- finely chopped
- 4 green onions- thinly sliced
- 1 tbsp garlic
- 1 tbsp avocado oil
DIRECTIONS
Cook brown rice according to package. In a separate skillet on medium heat sautee garlic and mushrooms in avocado oil for about five minutes. Add in 1 cup of the cooked rice (save extra brown rice in glass container in fridge for later use) and green onion. Mix well and cook for an additional 3-4 minutes before serving.
