Asian Chicken Stir Fry

- 2 boneless, skinless chicken breasts, sliced into strips
- 1 Tbsp grated fresh ginger
- 2 garlic cloves, minced
- 3 tsp coconut oil to coat the pan
- 1 medium onion, sliced or diced
- 2 - 3 cups of any combination of bok choy, celery, broccoli florets, or Napa cabbage chopped
- 1 cup sliced mushrooms
- 1 pepper (any color), cut into strips
- 1 cup cooked quinoa
Directions
- Heat oil in wok over med-high heat
- Add garlic, ginger, and chicken
- Stir constantly until lightly chicken is cooked through
- Add all vegetables and cook for 3 - 4 minutes - maintain crispness
- Serve over quinoa
